My Favorite Birthday Dinner

I love birthdays…. LOL; especially my own!! I always splurge with a favorite dinner that I came up with a couple years ago. It is just so good!!! I tend to be a fairly healthy eater most of the time, but in December I have fun. It’s a beef tenderloin with red wine sauce, blue cheese Yorkshire Pudding, Caesar Salad and a grilled vegetable. Dessert is always a three-layer coconut cake I make. I have had the recipe for over 50 years!!! Thank God the ingredients are still available!!! Below are the recipes to try. Again, this is not a healthy meal nor an inexpensive meal….. It is a special meal. I love champagne so always include a little bubbly!! Two of my favorites are Veuve Clicquot, Brut or Rose and the Jacquart Mosaique, Brut. Veuve Clicquot is available at Trader Joe’s!!

Beef Tenderloin with Quick Red Wine Sauce (Fr the Kitchen Show)

  • One 3 to 5 lb beef tenderloin, trimmed
  • ¼ cup extra virgin olive
  • Salt and pepper
  • 5 sprigs fresh thyme
  • 3 cloves garlic, crushed
  • 5 T unsalted butter, room temperature
  • 1 medium shallot, minced
  • 1 cup red wine
  • 2 cups beef stock
  • 1 T all purpose flour

Blue Cheese Yorkshire Pudding (Fr the Kitchen Show)

  • 12 strips of bacon
  • 2 cups 1% milk
  • 3 large eggs
  • 2 cups all purpose flour
  • 2 t salt
  • ½ cup finely crumbled blue cheese
  • Caesar Salad
  • ½ cup oil
  • 2-3 cloves garlic, minced
  • 3 T vinegar
  • 1 T Worcestershire sauce
  • 1 egg beaten with juice from ½ of a lemon

Caesar Salad

  • ½ cup oil
  • 2-3 cloves garlic, minced
  • 3 T vinegar
  • 1 T Worcestershire sauce

Anchovy paste (large squirt)

  • 3 T Romano cheese
  • Salt and pepper
  • 2 Heads of Romaine lettuce
